Description
The Damascus steel material is struck with a handle to give a hammered pattern. Because of the hammered pattern, another feature is that cut ingredients don't easily stick to the blade.
Rust-resistant VG10 steel is used for the blade.
We use VG10, one of the higher quality molybdenum steels. Although it is a rust-resistant material, it has excellent durability as well as sharpness.
Nakiri knife is specialized in vegetable cutting. However, it is commonly used by home users like Santoku.
Although it’s usage is similar to Santoku knife, the shape of Nakiri is rectangle. In addition, most of traditional Japanese knives are single-edge blade whereas Nakiri is double-edge blade.
The characteristic of the Nakiri "Damascus Series" is the pattern on the surface of the blade. The 63-layer steel material brings out dense and elegant patterns. Of all the Damascus knives, this one is particularly beautiful.
