Puttanesca Pasta Sauce

This classic dish is bursting with bold and savoury tastes.

INGREDIENTS
- 80ml olive oil
- 2 onions, finely diced
- 40g garlic, chopped
- 20g anchovy fillets
- 3 cans chopped tomatoes
- 75g capers
- 200g pitted black olives, cut in half
- 1/2 tsp dried chilli, optional
- Small bunch parsley, chopped
- 1 tsp salt
- Pepper to taste
METHOD
- Heat the oil in a Staub cast iron pot over a medium-low heat, add onion, salt and fry for 10 mins or until soft. Add the garlic, chilli & anchovies, cook for a further minute.
- Add tomatoes, anchovies, olives and capers bring to a gentle simmer and cook, for 15 mins.
- Add parsley & check seasoning.
PASTA
- Cook 400g fresh pasta or packet according to instructions.
- Heat 250ml sauce in your Swiss Diamond pan
- Add cooked pasta to the pan as well as a little butter & Parmesan.
- Combine & check for seasoning.
