Puttanesca Pasta Sauce

Indulge in the flavours of Italy with our homemade Puttanesca Pasta Sauce recipe!

This classic dish is bursting with bold and savoury tastes.

Get ready to tantalise your taste buds!

 

INGREDIENTS

  • 80ml olive oil
  • 2 onions, finely diced
  • 40g garlic, chopped
  • 20g anchovy fillets
  • 3 cans chopped tomatoes
  • 75g capers
  • 200g pitted black olives, cut in half
  • 1/2 tsp dried chilli, optional
  • Small bunch parsley, chopped
  • 1 tsp salt
  • Pepper to taste


METHOD

  1. Heat the oil in a Staub cast iron pot over a medium-low heat, add onion, salt and fry for 10 mins or until soft. Add the garlic, chilli & anchovies, cook for a further minute.
  2. Add tomatoes, anchovies, olives and capers bring to a gentle simmer and cook, for 15 mins.
  3. Add parsley & check seasoning.


PASTA

  1. Cook 400g fresh pasta or packet according to instructions.
  2. Heat 250ml sauce in your Swiss Diamond pan
  3. Add cooked pasta to the pan as well as a little butter & Parmesan.
  4. Combine & check for seasoning.
